Each late winter and early spring, the sap is ready. The stored-up starch in the trunks and roots of maple trees is converted into sugar. This sap is heated to remove the excess water and the concentrate is an amazingly tasty component of many foods and candies.

See this process first-hand by attended a Maple Sugar Tour at Stratford Ecological Center on February 16 and February 23.

During your tour, learn how to tap a maple tree, help collect sap, experience the evaporation process in the sugar shack, and spend time in Stratford’s beautiful forest.

And, thank heavens, wonderful local maple syrup will be available for purchase.

Hour long tours begin each half hour from 10 AM to Noon. Cost is only $4 per person, but advanced registration is required. Cancellations must be received at least 14 days prior to the event date for a full refund.
