A restaurant tenant at Polaris Fashion Place Mall has been replaced by a new kind of “gastropub,”

According to Wikipedia, a gastropub is a “hybrid pub, bar, and restaurant.” The Royce is a “polished gastropub,” according to owner Walter L. Carpenter, who named the establishment after his wife.

The menu will be both local and globally inspired. One dinner entree, for instance, is “seabass with chamomile yogurt.”

The head chef, Jonathan Olson, has had previous stints with well-known eateries The Keep and Black Creek Bistro.

You already have the opportunity to check out The Royce’s menu. Tempting sounding appetizers include Smokin’ Hot Dates, Guajillo Glazed Pork Belly, and Cast Iron Cauliflower; entrees include the classic New York Strip and Braised Short Ribs.

The Royce is located in the former Cantina Laredo location.
