This unique establishment, which has opened its doors at 5915 Evans Farm Drive, is not just a butcher shop but also a wine bar, offering a novel experience for food and wine enthusiasts. Owner Jeff Gaylor’s venture combines his passion for quality meats with a sophisticated selection of wines, curated by sommelier David Kusz.

Prime + Vine stands out for its commitment to locally sourced produce. The butcher shop prides itself on offering Ohio-sourced meats, including the luxurious American wagyu beef, raised on Gaylor’s own ranch near Howard in Knox County. This dedication to local sourcing extends to their offerings of Berkshire pork and free-range chicken, supplied by Woodruff Farm in Urbana. The emphasis on local produce not only supports Ohio’s agriculture but also ensures fresh, high-quality meats for customers.

A Wine Lover’s Haven

Complementing the butcher shop is the wine bar aspect of Prime + Vine. With a selection handpicked by sommelier and educator David Kusz, the wine bar offers a range of choices to satisfy both novice and seasoned wine enthusiasts. The presence of two NAPA Technology wine-tasting machines adds a unique interactive element, allowing customers to sample wines before committing to a purchase. Operating Hours and Accessibility

Prime + Vine caters to a diverse clientele with its convenient operating hours. While closed on Mondays and Tuesdays, the meat shop is open from 11:00 AM to 6:00 PM from Wednesday to Sunday. The wine bar operates from 4:00 PM to 9:00 PM from Wednesday to Friday and extends its hours from 11:00 AM to 9:00 PM on Saturdays and Sundays. This schedule accommodates various lifestyles, whether one is looking to shop for premium meats during the day or enjoy a relaxed evening at the wine bar.
