Cove, a Seafood Joint, has announced its impending closure after a year-long stint in the culinary playground of chef Josh Dalton. Located at 15 E. Winter St. in Delaware, Ohio, the restaurant was part of Dalton’s innovative “restaurant incubator” space. This unique venue has served as a test kitchen for various dining concepts developed by the chef.

The Legacy of 15 E. Winter St.

The Winter Street location has a history of birthing successful restaurants. Both Veritas and Speck Italian Eatery, the predecessors to Cove, found their initial footing here before relocating to permanent homes in Downtown Columbus. However, Cove will not follow in their footsteps. The seafood-focused eatery has confirmed that it will not be moving to a new location and will instead close its doors for good.

A Bittersweet Farewell on Social Media

In a recent Instagram post, Cove revealed that it would be closing in the coming weeks, although no specific date was provided. When asked in the comments if the restaurant would join its predecessors, Speck and Veritas, in Columbus, the straightforward reply was, “Nope she will be gone forever!” One Instagram user, Delawareoh_foodie, expressed sadness but also excitement for what’s next, commenting, “Sad to see it go, but can’t wait to see what’s coming! 🤗” While Cove will be missed, the restaurant did tease that a new concept is already in the pipeline, although details remain under wraps.

The Incubator Lives On

Despite Cove’s closure, the spirit of culinary experimentation will continue at 15 E. Winter St. The space, which has been a “playground of ideas,” according to Cove’s Instagram post, will undoubtedly give rise to another innovative concept. As the community bids farewell to Cove, anticipation builds for what Chef Josh Dalton has in store next.
