When you step into Bridge’s End Brewing, which opened its doors on May 21, you’re not just walking into another craft beer spot. You’re entering a place where brewing is treated as both a science and an art, shaped by decades of passion and respect for tradition.

The new microbrewery, tucked at 9320 Dublin Rd. in Shawnee Hills, carries a character that feels deliberate, thoughtful, and even a little old-fashioned—in the best sense of the word.


Brewing the Old Way

At the heart of Bridge’s End is founder Bill Schirmer, a retired GI surgeon and longtime Dublin resident who’s been brewing at home since 1992. After more than 30 years experimenting, refining, and chasing the perfect pint, Schirmer has turned his basement hobby into a public venture.

Schirmer insists on methods many modern breweries have left behind. Decoction, an old-school process of drawing out grain flavors, is standard practice here. Natural carbonation, a slower and more hands-on way of creating bubbles, is another. These approaches demand patience, careful timing, and a steady hand—qualities Schirmer knows well from his surgical days.

The result isn’t the latest double IPA or pastry stout. Instead, Bridge’s End focuses on sessionable lagers and other easy-drinking options. Most come in at a lower alcohol level, intended for sipping and socializing rather than chasing intensity. It’s a quieter kind of craft, one that values balance over boldness.


A Team Effort

Schirmer isn’t alone behind the tanks. Brewing operations are led by Elliot Hamilton, formerly of Watershed Distillery, who brings professional expertise to complement Schirmer’s years of homebrewing. Together, they’re shaping a lineup that combines old-world process with fresh ingredients, keeping tradition alive while still exploring new flavors.

Food is part of the plan too. Bridge’s End will serve shareable small plates, tapas-style dishes, and pizza—meant as companions to the beer but also as an invitation to those who may not drink at all. The idea is to make the brewery a comfortable gathering place, not just a taproom.


More Than Beer

For Schirmer, Bridge’s End Brewing isn’t only about the pint glass. It’s about creating a space where people can slow down and connect. Plans include live music, festivals, and community events.

That community-driven vision sets the space apart just as much as its brewing philosophy. In an era when many breweries race to produce what’s trendy, Bridge’s End leans into craft’s roots: tradition, patience, and care.


Looking Ahead

The opening of Bridge’s End Brewing marks the culmination of more than three years of planning and perseverance. For Schirmer, it’s also the realization of a decades-long dream, rooted in a belief that sometimes the old ways really are the best ways.

For Shawnee Hills and the greater Columbus area, it means one more place to raise a glass—this time to craftsmanship, community, and the slow art of brewing done right.
